Ginger Haskap Cigars

Ingredients

  • 60 g (1⁄4 cup) butter
  • 50 g (60 ml) sugar
  • 30 g (2 tbsp.) grated fresh ginger
  • 240 g (8 oz) haskap
  • 4 sheets of filo pastry
  • Ginger custard
  • 250 ml (1 cup) of milk
  • 20 g (4 tsp.) grated fresh ginger
  • 2 egg yolks
  • 30 g (50 ml) sugars

Instructions

  1. In a saucepan, melt the butter and add the sugar and grated fresh ginger. Leave to candy for two to three minutes. Then add the haskap and brown for a minute. Reserve.
  2. Prepare the ginger custard. Boil the milk with the grated ginger. Separately, in a bowl, combine the egg yolks and sugar. Pour the milk over it. Transfer everything to the saucepan and cook over low heat, stirring with a wooden spoon, without ever reaching a boil. Once the cream is coated, pour it into another container and let cool.
  3. Make the cigars by folding each phyllo sheet in half and brush with melted butter. Place the haskapberries and roll to give the shape of a cigar. Bake on a baking sheet in 350 ° F (180 ° C) oven for five minutes. Serve with the ginger custard.
