Cream of Haskap

Ingredients

  • 1 tablespoon of olive oil or avocado
  • 1 onion, cut into pieces
  • 1 potato, cut into pieces
  • 1 stalk of celery, thinly sliced
  • 1 chopped carrot
  • 1 cup of chopped broccoli
  • 1 teaspoon turmeric
  • 1/4 teaspoon ginger powder or a small piece of fresh root
  • 1 pinch of ground cloves
  • 1 garlic clove, minced
  • 1 teaspoon sea ​​salt or soup herbs
  • 1 pinch of ground pepper
  • 3 cups of water
  • 5 tablespoons sugarless haskap spread

Instructions

  1. Heat the oil in a saucepan at a medium temperature.
  2. Add onions, turmeric and ginger; cook until onions become translucent.
  3. Add garlic, celery, carrot, and broccoli. Cook for 5 minutes.
  4. Add water, potato, pepper and salt.
  5. Bring to a boil and cover, reduce the temperature and let simmer for 20 minutes.
  6. When cooking is complete, add the sugarless haskap spread
  7. Place the soup in a blender to get a creamy texture.
  8. Season to taste.
