Ingredients

  • 1 pork loin
  • 1 cup haskap berries
  • ¼ cup honey
  • ½ cup finely chopped hazelnuts
  • 1 tablespoon tapioca (Mix with Haskap juice)
  • 1 tablespoon crushed tarragon leaves
  • 1 tsp pepper
  • 1 teaspoon lemon juice
  • ½ teaspoon salt
  • ½ teaspoon cinnamon

Preparation

  1. Cut the pork loin roast in the shape of a butterfly.
  2. In a bowl, combine all the ingredients except the pork loin
  3. Spread the mixture over the pork.
  4. Pull the roast up and pin with toothpicks.
  5. Roast the meat in the oven at 325 F. for about 45-60 minutes.
