Oatmeal and Haskap Ccokies

Ingredients

  • 360 gr (2 cups) oatmeal
  • 180 gr (3 | 4 cups) flour of your choice
  • 120 gr (2 | 3 cup) grated coconut or chopped almonds
  • 1 ml (1 | 4 teaspoon) salt
  • 120 g (1 | 2 cup) canola oil or coconut oil
  • 180 g (3 | 4 cups) haskap jam
  • 120 g (1 | 2 cup) maple syrup
  • 180g (3 | 4 cup) chopped cashews or pecans
  • 120g (1 | 2 cup) chocolate chip or raisins

Instructions

  1. Heat the oven to 180 Celsius (350 F)
  2. In a large bowl, combine oatmeal, flour and coconut.
  3. In another bowl, whisk the syrup, haskap jam, and oil (if coconut oil, heat it a little to make it liquid).
  4. Pour the liquid ingredients over the dry ingredients and stir to combine them well.
  5. Stir in nuts and chocolate chips.
  6. Shape small balls on a large baking sheet with parchment paper, bake for 12 minutes. (Cooking time may vary). Take them out as soon as they are golden!
