Ginger Haskap Cigars

Ingredients

  • 60 g (1/4 cup) butter
  • 50 g (60 ml) sugar
  • 30 g (2 tbsp) freshly grated ginger
  • 240 g (8 oz) haskaps
  • 4 sheets phyllo pastry
  • Ginger custard
  • 250 ml (1 cup) milk
  • 20 g (4 tsp) freshly grated ginger
  • 2 egg yolks
  • 30 g (50 ml) sugar

Preparation

  1. In a saucepan, melt the butter and add the sugar and freshly grated ginger. Let it candy for 2 to 3 minutes. Then add the haskaps and sauté for 1 minute. Set aside.
  2. Prepare the ginger custard. Bring the milk to a boil with the grated ginger. Separately, in a bowl, mix the egg yolks and sugar. Pour the milk over it. Transfer everything back into the saucepan and cook over low heat, stirring with a wooden spoon, without ever letting it reach a boil. Once the custard coats the back of a spoon, pour it into another container and let cool.
  3. Make the cigars by folding each phyllo sheet in half and brushing with melted butter. Add the haskaps and roll to form a cigar shape. Bake on a sheet pan at 350°F (180°C) for 5 minutes. Serve with the ginger custard.
